Homemade Oatmeal Creme Pies
These cakes were an absolute hit with my family. I made them on Sunday and they were gone by Tuesday. We are fans of Little Debbie so it was no question that I had to make something that was comparable. Since inflation started driving up grocery prices I started thinking about what my family was eating. I couldn't see paying $5 for a box of 8 cakes that would be gone in two days. I've always enjoyed baking and experimenting in the kitchen. So I started experimenting with different baked goods.

The recipe for this tasty treat is fairly simple. It has two parts. Part one is baking the oatmeal cookies and part two is making the creme filling. The ingredients are the same ingredients you need for making oatmeal cookies. This recipe will make approximately 10-12 cakes depending on the size of your cookies. The total time is about an hour including prepping the cookie batter, baking cookies, and making the sandwiches.
Ingredients:
Oatmeal Cookie Recipe
1/2 cups Old Fashioned Oats
1 cup All Purpose Flour
1/2 teaspoon Salt
1 tsp Baking Soda
1/4 cup Light Brown Sugar
1 Tablespoon Molasses
3/4 cup Granulated Sugar
1 large Egg
1 stick Margarine (Softened or room temperature)
1 heaping Tbsp of Vanilla flavoring
Preheat your oven to 350°F. To start with, you will need to mix your cookie batter. If you have a stand mixer, you'll need to use the paddle attachment to mix your cookies. Grind your oats into smaller pieces using a food processor or blender. In the mixing bowl, you'll add the granulated sugar, light brown sugar, molasses, & margarine. Mix on a low speed for 2 minutes. Add egg and vanilla flavoring. Mix until egg is incorporated.
In a separate bowl, add oats, all-purpose flour, baking soda, & salt. Stir the dry ingredients to ensure they are evenly distributed. Add your dry ingredients to the mixing bowl. Mix in the mixer for roughly 2-3 minutes on low speed. You will know the cookie batter is ready when it forms a thick sticky dough.
Once you have your cookie batter made, then you will need to portion them on a greased baking sheet. You need to use roughly the same amount of cookie batter for each cookie as you will be putting them together to make a sandwich. I like to use a tablespoon to measure but you can use whatever works for you.
Bake cookies in the oven at 350°F for approximately 10-12 minutes. If your oven temperatures run high then, I suggest turning your oven down when you start baking. These cookies should be slightly underbaked so the sandwich will be soft and decadent. Bake the cookies until the edges start to turn brown. Once the edges of your cookies are turning brown, then take them out. They will still be soft, but will firm up once they cool down. The texture should be chewy. If you bake them too long, they will get hard when they cool and be tough to bite into.
While your cookies are cooling, you can make your creme filling.
If you are using a stand mixer, you will need to switch to the whisk attachment to make the filling.
Vanilla Creme Filling Recipe
2-3 Tablespoons Heavy Whipping Creme
2 1/4 cups Powdered Sugar
1 stick of Margarine (softened or room temperature)
1 -2 heaping Tablespoons of vanilla flavoring
To the mixing bowl add, the heavy whipping creme, margarine, & vanilla flavoring. Mix for 1-2 minutes or until combined. Add the whipping creme in small increments and whisk for 2-3 minutes. Your creme filling is done mixing when you see soft peaks begin to form.
Using a piping bag or a spatula, put creme filling on the bottom of the cookies. If you are going to use a piping bag, you should use a size 1A or 2A piping tip.
You can use a smaller amount of creme filling than what is pictured here. I like a little extra, but my husband doesn't. For his I put a little less creme filling,
Choose cookies of about the same size and put them together to form your sandwiches. You can enjoy immediately or store in the refrigerator for later enjoyment.
